I am struck up in EB3 since Oct 2020, if I do Interfile to EB2 & get GC approved in a month or 2, Does I still have to stay with the company for 180 days from the date of Interfile ?

Once you get your Green Card, you are free to do what you want. You can leave the job, do whatever you want as long as it is legal and legit. Wait another 4 and half year before you apply for your Naturalization.

The 180 day period of AC21 only applies before you get your GC and since your 485 is filed or interfile is filed (whichever is later).

Once you already have your GC - technically you can switch the job the very next day.
